How To Prepare A Maize Meal

Maize, which is also known as corn in other parts of the world is a crop with kernels which are normally yellowish orange in color. Some kinds of maize have multi-colored kernels as well. Maize varieties that are rich in sugar are normally used for human consumption, whereas other varieties are used for animal feed.

Maize Porridge or "Stywe Pap" as it is known in the local language of South Africa, is a staple food in the region. It is known as Polenta in other regions of the world, and is made by grinding Maize kernels into a smooth maize meal porridge. It is served with milk, sugar and a scoop of butter. It is a popular breakfast cereal in most parts of the country.

To prepare a maize meal, one cup of maize is mixed with 3 cups of water to form a smooth paste. Two more cups of water with salt are placed in a microwave and brought to a boil. The paste is then added to the boiling water and mixed with a wooden spoon thoroughly until all the lumps are dissolved. The mixture is again placed in the microwave and cooked for about 3 to 4 minutes until the meal is fully cooked.

Another way to make the maize meal is to prepare a stiff porridge. It is very similar to the smooth porridge except that it is served with meat. Two cups are water are placed in a bowl in a microwave and boiled. Salt is added to the water, and one cup of maize meal is slowly added to water and mixed thoroughly with a wooden spoon. A tablespoon of butter is then added to the mix.

The mixture is again microwaved on "high" for about 3 minutes. By this time, the porridge would become stiff and thick. The meal is stirred to dissolve lumps in the mixture. Finally, the mix is again microwaved for 3 more minutes and mixed thoroughly and covered with a lid. The mixture is allowed to stand for 2 minutes before being served.

The meal is typically served with sausages, curries, and stews. The above ingredients are used to serve 4. The portions can be increased for larger gatherings.

Polenta is popular in the US especially among the Hispanic population. It is also found in Italy and certain other parts of the world. The meal is highly nutritious and tasty and can be made in various different forms.
