A Life Full of Cake - How to Make Raspberry Cake From Scratch

Every morning the clock will wake me up at seven fifteen. I spend five minutes to brush teeth and take breakfast. But every time I hurry off to the bus station, the exact bus I want to take would just drive off. Except that little tragedy in the morning, the rest of the day is as dead as dead can be. Sometimes I wonder if I have fell into the trap of life, a boring circle that goes around and around. But once in a while, I settle down and focus myself on the beloved cake making leisure. I feel life is after all not that boring.

For me, the process of making cake from scratch is the wonder of my life, small but delightful. In a seemingly dead and boring journey of life, making cakes has brought also changes. And I secretly hope that my recipes and words have brought change to your life too, even if it is just a bit of it.

HOW TO MAKE CAKE FROM SCRATCH - RASPBERRY CAKE

INGREDIENTS:butter 50g, sugar 40g, low-gluten flour 50g, baking powder 1/8 teaspoon, milk powder 1/2 teaspoon, a little vanilla extract, one egg, raspberry 25g

BAKING CONDITION:in the middle of the oven, 180 degrees, 20 minutes

PROCESS:

  1. Melt the butter and manually beat it smooth.
  2. Add some sugar and manually beat until the mixture becomes white and puffs.
  3. Add egg in three times. Make sure the content in your bowl is completely mixed before you add the next portion of egg.
  4. An evenly mixed butter paste should be thick and smooth.
  5. Add vanilla extract and milk powder. Mix it even.
  6. Sift low-gluten flour and baking powder into the butter paste.
  7. Now use rubber spatula to mix. Be gentle during the mixing and make sure you don't overly stir the paste.
  8. Add raspberry and again, mix!
  9. Oil the molds, put a few raspberries at the bottom of the molds and then pour paste. Fill only 2/3 of the molds.
  10. Put into the pre-heated oven and bake for roughly 20 minutes (you can adjust the time of baking according to the size of the molds. Once the bakery turns slight yellow, it's more or less done).

TIPS:

  1. Raspberry is a very healthy fruit. It has a very special sour and sweet taste, perfect as baking decoration.
  2. Make sure you add egg in several times so that the egg and the butter won't separate.
  3. Don't stir too much after you add flour. Otherwise it will damage the taste.
  4. The baking power I give in the recipe is already the minimum we need for this raspberry cake. It better not to omit. But if you have no vanilla extract, we can skip this ingredient.
