Taste Testing the Best Foods of Peru

If you're in the country enjoying guided walks in Peru, you will have the opportunity to sample some of the most delicious food in South America. The cuisine is a big part of the culture of this fascinating country and you should do your best to try as many authentic dishes as possible while you are there.

Ceviche

Just off Peru's coast is the Humbolt Current, in the Pacific Ocean. This area of ocean is teeming with seafood and the locals take advantage of that to create their distinctive cuisine. Ceviche, for example, is a dish comprised of seafood that has been "cooked" using nothing more than citrus juice. The process of marinating the seafood in this citrus juice allows the acid in the fruit to flavour it as well as cook it. It gains extra spice through the customary inclusion of aji pepper and red onion and is often served with a white Andean corn called choclo, or with sweet potatoes. Many a hungry traveller has ended day-long walks in Peru with a hearty and delicious meal of ceviche - it's definitely worth the journey!

Cuy

The name cuy may not be familiar to you, but the name guinea pig probably is! That is what this next food really is, but be adventurous and don't let that throw you. This bony, meaty meal can be prepared through baking or by being roasted on a spit, and the end result is usually served intact with the head still on. Most liken the taste of cuy to that of gamey meats such as wild fowl or rabbit. The details of this dish may make it sound unlike anything you have had before, but once you try it you will discover why it is one of the most delicious delicacies of Peru.

Causa

Causa is a name for a type of casserole that is common throughout the country. It consists of avocados and potatoes put together in layers, then sliced and presented to diners cold. This dish may contain additional layers made from different kinds of meat, tuna, or possibly even hard boiled eggs. The meal is quite heavy but wonderful for building the energy you need for long walks in Peru - with its excellent mix of nutrients and delicious natural flavours.

Lomo Saltado

Lomo saltado is a dish brought to the country by the Chinese immigrants who once journeyed here seeking work. Their presence led to a sort of fusion cuisine, perfectly described in the flavours of the lomo saltado. This dish is a stir-fry that combines beef, onions, tomatoes, and peppers. These ingredients are cooked in a pan alongside fried potatoes and soy sauce, and the end result is served over a hearty helping of white rice.
