Beef Stew

Stew is a really underrated meal - it is really simple to prepare, can be very healthy and can easily be used to feed a lot of people, whether it is for a family meal or for a chilled out dinner party.

Stews are really very simple to make- it is pretty much just browning off meat in a pan, adding either some stock or water, throwing in a few vegetables and leaving to simmer for a few hours- even an inexperienced cook can make a great stew. If you would like to be able to cook a great but simple stew, take a look at this recipe for a simple beef and ale stew, it serves between four and six people

Ingredients: 1 kilogram of stewing beef 3 medium-sized carrots An onion A pint of beef or chicken stock A couple of sticks of celery 2 cloves of garlic 1 tablespoon of flour 2 tablespoons of vegetable or olive oil

Cube up the beef into chunks and slice up the vegetables to start with. Next pre heat a casserole dish in the oven at around 170 degrees centigrade.

Put a large saucepan on a medium heat and add the oil, and brown off the meat. (Lightly cook the surface until the colour changes) Then remove the beef and keep it warm.

Add the vegetables to the pan and let them fry for between five and ten minutes- if you need to add a touch more olive oil do so. Then add the meat and vegetables casserole dish that you pre heated earlier- add salt and pepper to give it some more flavour, and then simply pour in the stock.

Give the whole mixture a really good stir to ensure that all of the ingredients are evenly distributed throughout the dish, and then pop the lid on the casserole dish and allow it to cook in the oven for a couple of hours.

You can serve the stew on its own with perhaps a sprinkle of parsley, or you could also serve it with some boiled potatoes, which are especially good with the thick gravy of the stew itself. If you enjoy a simple beef stew you may also like to consider making a beef stew with dumplings - dumplings give a really good starchy constituency to a stew, and they taste great especially when they flavoured with herbs such as tarragon and rosemary.
