Finer foodstuffs include the truffles that are found around San Miniato in October and November. The area's well known peasant recipes are most famously represented by ribollita, a reboiled Tuscan soup that makes use of left-over pulses and vegetables, turning them into a delicious broth. There really is something for everyone.
