3 Types of Popular Woks

A look in the market today will reveal many different types of woks. They come in different sizes and are made from different materials. It is important to find good ones that will help to enhance the cooking experience. From cast iron to aluminum, these cooking supplies are more available today than ever. New manufacturing methods have led to an increase in production. However, those who have spent years in Asian cooking still contend that the best woks are the traditional Chinese ones that are made from carbon steel. However, the heavy gauge aluminum ones are gaining popularity, especially those with a nonstick surface.

1. Traditional cast iron woks This round bottomed wok is especially suitable for use with the traditional Chinese pit stove. It is also effective for use on the modern Chinese stoves. The wok can be used on modern flat stoves through the addition of a wok ring that acts as a base. The woks come in different sizes. A regular family wok can measure about 14 inches in diameter. Restaurants have giant woks, which can have a diameter of two meters or more.

2. Carbon steel woks These popular ones are inexpensive and come in different styles and qualities. Some of the low quality woks can end up burning your food and are not very good. They do not heat up evenly, and they do not retain heat for long. Most people favor the carbon steel woks because they are lightweight and have quick conduction of heat.

3. Modern cast iron woks Unlike with the traditional ones, these woks have a carbonized layer that makes it difficult for food to stick on the wok. Some of the best woks retain heat very well, and it is distributed evenly. They take longer to heat, unlike the carbon steel woks. They are much heavier than the traditional Chinese woks.

Some of the best ones today are coated to make them non-stick. Teflon and Xylan are used to coat the woks. However, they are not recommended for most cooking techniques that require high temperatures. The coating can be broken down by the heat, and is harmful to health. Other types include the clad woks, which are made from different layers of stainless steel and aluminum or copper. These woks are heavy and expensive and work quite well. However, they are not as good as cast iron or carbon steel woks.
