Types of Commercial Microwave Ovens

Choosing a microwave oven for a restaurant or commercial kitchen is a big decision. The amount of time and energy saved by installing a commercial microwave will be great, but can be optimised by ensuring you buy and install the right oven for your commercial cooking environment.

Many commercial microwaves now come equipped with the ability to steam food stuffs, providing another way to cook or reheat food by a different method and opening up a range of new culinary options. By being able to steam food in a microwave restaurant menus can be developed or extended with this new option, and with the knowledge that you will not need to put aside a hob and cumbersome equipment in order to offer it.

Another common feature of commercial microwaves is a grill element. This can be used in conjunction with your normal grill to increase the number of grilled items servable at the same time, for finishing, or as a back up for the standard oven grill. Grill microwaves come with a wire stand to allow smaller food items to be brought closer to the heat source and usually grill to a good even finish.

You may also find extra features such as the facility to roast meats through convection ovens, crisp up pizza bases with a crisper plate, bake cakes, and much more. Commercial microwaves have moved on by leaps and bounds in the last few decades, and have become an essential part of most restaurant and commercial kitchens.

Microwaves are category rated A to E for power, showing wattage and helping you judge how quickly food will be heated. As a rule of thumb Category B is about 650 Watts, Category D is around 750 Watts, and Category E is in the area of 850 Watts.

Modern microwave ovens can feature a host of other feature including:

Preprogrammed timings - high end microwave ovens will often have this feature. From a range of options you select the type of food and the weight, and the microwave automatically cooks it at the optimal temperature for the recommended time.

Sensor Cooking - sensors inside the microwave oven monitor the moisture and heat levels of the food inside. If the food is cooking too fast or slow the unit will automatically speed up or slow down the process.

Self Cleaning Lining - many commercial ovens now come with a self cleaning lining, which burns off food splashes and grease as food is cooked.

Chaos Defrosting - microwaves are directed at the food in random blast pattern, speeding up the defrosting process by making it more even than tradition turntable methods.

One final point (which may sound silly) but make sure the commercial microwave oven you choose is big enough to fit your equipment, such as trays and pans, that you may wish to put in it.

There are many variations of microwave oven for restaurants and the commercial kitchen. Make sure you research all options thoroughly and carry out price comparisons on your short list of possibilities before reaching a final decision.
