In Europe oak is the most common wood used for generating the smoke but back in time alder was used as well. However in the North American countries smoke is generally produced from hardwood and some softwood like pine and firs. Other fuels apart from wood can be used as well with the addition of different ingredients for flavoring.

The smoke must not be static and flow out with the hot air as static smoke makes the food taste bitter. There are two types of smoking done namely hot and cold. Cold smoking is done at 100 degree Fahrenheit and enhances the flavor of the food whereas in hot smoking food is exposed to heat and smoke in a controlled environment, ideally at 175 degree Fahrenheit. Smoke roasting can also be done in a food smoker but the temperature required is around 250 degree Fahrenheit. Smoke roasting is generally known as pit baking and is avoided due to the threat of carbon monoxide poisoning because of high temperature.

Despite the fact that smoked food may sometimes taste bitter and is also found responsible for gastrointestinal cancer, doctors today say that smoked food is healthier because no oil is used in its preparation and is ideal if you wish to stay fit. Fire proofing is the most important thing and there have been cases reported when the food smoker suddenly bursts into flames despite frequent checking. The best idea is to use bricks as it would not require any fire proofing but that can be quite expensive and that is definitely something you don't want.

Apart from brick some people have been able to make a food smoker out of a 55 gallon drum, cardboard boxes (which have the highest probability of catching fire) and even old refrigerators. Most of the homemade food smokers are of wood as it looks better and could be easily installed with fire proofing with the help of fire proof cladding. When planning to make a food smoker out of wood one must keep in mind that he/she is supposed to have the basic carpentry skills and some experience in wood work.

In the end there are few things that one should always keep in mind before purchasing or making their food smoker:

  • Decide the price range and then look for the following.
  • The size of the smoker must be according to the requirement.
  • What sort of fuel you would use.
  • It is better if you keep it outdoor because proper ventilation is required.
  • The rack inside the smoker must be such that exposure between the food and smoke is enough.

A food smoker is good to have especially if you often have friends over for barbecue nights.
